Yummy sauce to put over rice noodles

Yes, that's it's name. I just named it. I made up the recipe, so I can name it whatever I want, right!?
OK, I love rice noodles and always have some in the fridge so I can insta-snack without much thought. Sometimes I cut up veggies and toss them in, too. Sometimes I don't. But I always use a version of this sauce, 'cause it's yummlicious.
This sauce is a meld of several others I've seen all kinds of places. I'm one of those intuitive chefs, so I just sorta try stuff, and it's never the same more than once. My apologies if this is similar to anything anyone else has posted.... Anyway, here's the basic recipe:
1/2 cup brown sugar (lite or dark, doesn't matter) 1/4 rice wine vinegar 2 tsps canola oil juice of one lime 3 Tbsp honey 3 Tbsp dijon mustard fresh garlic, minced, to taste (omit if garlic gives you problems. sometimes I just skip it myself 'cause i'm lazy!) Spring onions, to taste (again, omit if desired) salt and pepper, to taste
Whisk ingredients Heat on stove top at medium heat Pour over noodles, stir well
(NOTE: If you're using the kind of rice noodles that you heat up, then you don't have to heat the sauce. Just toss it onto the hot noodles after you've drained them)

Ummm... I'm trying to phrase this so it doesn't sound smart-alecky....! They're noodles made from rice. There! It sounded bad anyway... SORRY!
I don't know brand names, 'cause I get them in the Asian markets and the labels are written in Chinese, etc....

I tweaked it since I didn't have everything at home, but I just had a very yummy dinner of rice noodles with your sauce (and an ADB for dessert!). I didn't have any rice wine vinegar or lime, so I used extra honey, lemon juice, and little water...sooo good, thanks, JenX!

I tried this too. What a versatile sauce. I used it for the noodles and also as a marinade for chicken breasts. Yum! What else do you do with rice noodles? Joan

Well, in Eating for IBS there's a great tuna salad recipe... (sorry, don't have the book in front of me. ) and it calls for pasta. If I don't have any gluten-free pasta around, I will use rice noodles for things like that. Tip: don't use the teeny tiny noodles for something of this nature, 'cause they're just not substantial enough to "hold" the heavy tuna. Use the fatter rice noodles.
Mostly I make the rice noodles as described (or a variation thereof) and use it as a side for just about everything. If I've got some chicken or salmon and don't feel like making rice, then off to the side go some rice noodles. I've found that by tinkering with that basic recipe, you can make that sauce go with tons of stuff. Example: substitute lemon for lime if you used lemon on your fish.... add different herbs that complement what's on your chicken, etc...
Once I was craving marinara sauce (which doesn't bother my tummy) but was too dang lazy to make gf-pasta (you know, that 10 minutes boiling time was too taxing for me! ), I tossed it on some fat rice noodles. Tasted great.
I'm sure there are tons of other things to do with them. Lemme see what I can come up with. It will be good for me to expand my menu choices!

So you don't have to cook rice noodles?? I've never used them before, so I have no clue either. I just assumed you cooked them like pasta.

Hi, Kree.
Some you just soak in water for a few (3 -5 or so) minutes and then drain 'em and use 'em. Others you soak for a few minutes, then toss in boiling water for another 3 minutes before you drain 'em and use 'em.
The packaging often says which one of the above is the case, but I don't think you can ruin them by soaking and then boiling for a few even if it's the "wrong" kind for that. (Lots of the packages are in Vietnamese, Korean, Chinese, Japanese, etc..., so I have no idea what they say! When in doubt I soak then boil.)

I don't know about Rochester, but here in the DC-MD suburbs all of the grocery stores carry at least a small sampling of Asian foods. That's where the rice noodles are. I prefer the mega Asian markets (cheaper and more variety)...

I wish we had an Asian market around here!! There might be one in the city, but I don't get out there much. I should look into it, though, they sound very neat. Otherwise I know my supermarket has an Asian section, so I should be good to go!

Yeah, we have a few around here. And what's really neat is that they sponsor tours of the market and explain where (and what!) everything is.
It's really cool, 'cause a lot of us American-types don't know what's going on with Asian veggies, pastas, etc...!

Thanks!!!! Wow, what a nice change to what I normally put on rice noodles, which is fish sauce and GF soy sauce, cooked shrimp and some veggies like peas or snow peas. It's quick and easy but gets old.
I've found a problem with fresh garlic but not garlic powder so that may be an option. And if I didn't have green onions I may just throw in dried chives. See what a lazy cook I am?

Thanks for the concern. I'm fine, really, just been busy with all sorts of projects and travel.
A HUGE congratulations on being the new recipe moderator!! Of all the people in the world you definitely should be "the" one
.you rock. BUT, it's all your fault I went to baking again when all I ever wanted to do in mid-life was turn my kitchen into an extra closet, and eat out all the time. I swear
I've had to give up the Britney Britches (can't get in them anymore anyway) and wear white granny slacks and let them project films on my rear end!!! Have to give up baking and computers a while and beef up the exercise. Duct taping my mouth wouldn't hurt either. When I see a recipe post from Kree I'm just going to turn my head from now on
If I so much as look, I'm doomed!!!

In Boston we could get Kosher rice noodles...not so much here. I MISS THEM!
Wow, you found GREAT stuff to do with them! I wish I'd been so creative I usually just ate em' in marinara sauce...
