Freezing Ginger

I apologize if this is common knowledge, but I never knew you could freeze ginger. I got this from the Nakano vinegar web site:

Any remaining fresh ginger may be stored in the freezer and grated while still frozen for future recipes.

I love discovering new ways to reduce waste.

OMG - I was JUST looking for info on how to freeze ginger yesterday morning! Thank you!

I found to wrap it in wax paper, throw it in a freezer bag, then grate while still frozen also.

It didn't say anything about peeling first though. I'd think you'd peel it though.
