Yep, Egg Beaters are egg whites! The original recipe called for one egg so I just use enough Egg Beaters to make 2 egg whites!

Kree, this is very, VERY good -- definitely a keeper. I just made it for dinner tonite; hubby had 2 helpings, I had one. I added frozen peas for some insoluble fiber, and I think next time I make it -- and there WILL be a next time! -- I'm gonna add more soy cheddar. (I like cheese.)

I'm so glad you liked it! What a great idea to add peas. I have a confession to make... I've started being a little more liberal with the cheese since posting this too. Things can never be too cheesy.

Kree or anyone... have you tried using Soya Kass cheese for this recipe? Do you think it would work ok? I wanted to ask before I tried it since it is so much more expensive then the galaxy stuff.

Shell, I don't know Soya Kass. I made mine with Vegan Rella cheddar -- it was yummy -- but next time I make it I'm gonna add more of the cheese. (Also I like the peas in it too.)

Maybe someone else can help you with that Soya Kass. Sorry I can't. But post again after you make it and let us know what you ultimately used and how it came out, okay?

I've never tried Soya Kaas either, but I'm assuming it would work just as well! I hope so, since I don't want you to waste your money.

Thanks ladies for the cheese help Yes, I'll let ya know how it turns out when I finally do make it.

I did have one more question..... the breadcrumbs... fresh or store bought (like progresso?)

oh goodie... then I'm one step closer to havin all the fixings!! hehehe

I just had a slice of the Soya Kaas jalapeno cheese cut up and melted on a few Stacy's baked pita chips... microwave for 20 secs is all it took......YYUUMMMMMMMMM!!! I can't wait to try either this kind or the mild cheddar with your recipe
