TURKEY....NEED HELP

ok...so when I tried to use the ground turkey breast for tacos it still was really white and tasted like "turkey" so the family did not seem to like it. Then I made the meatloaf and it tasted good but it formed this hard crust all over...kind of leathery. I had to peel it all off to get to the loaf. Is this mormal? Am I doing something wrong?

Hi Carrie,

Your tacos tasted like turkey but your family didn't like it? It sounds like they don't like turkey.

As regards the turkey "meat" loaf, yeah, I notice the "hard crust" when I make my LEAN turkey "meat" loaf. I think it's because the turkey has no fat in it to keep the top moist when it bakes. I make a piquant sauce for the top before I bake mine, and it helps a little.

I never thought about this, but I wonder if you could cover the loaf before baking -- I'll bet that would keep it moist and you wouldn't end up with that baked crust.

However, if your family doesn't like the taste of turkey, maybe you should switch to chicken? Hey -- hold on there! What about ground soy substitute? It makes a terrific chili. I'll bet your family might like that, what do you think?

My family is not to keen on the turkey thing. I use chicken and ground chiken will work, I even whip in some taco seasoning with it for them to give a wow flavor. For them I even add a little canola oil to a fry pan about 1/2 tsp and saute the corn tortilla and add soy parmesan cheese to the outside . they love it. For me just plain no oil, and IBS safe the works.

That's what I do... works ok.

I still miss "real" meatloaf sammiches, though.
