Thanks very much for the "ultimate non-dairy chocolate pudding"! I finally tried it and it worked, yummily! I can have pudding now - that makes me happy (I've always preferred vanilla to chocolate, though. Do you think I could add more vanilla and no chocolate? Or would that make it weird?)

Yay! I'm glad you liked it! I've never tried it without the chocolate, but I don't see why it wouldn't work. I'd say give it a try! I'd love to hear how it comes out. If it doesn't work I know Mori Nu (the tofu company) makes little packets called "Mori Mates" (or something like that) that you add along with one box of their tofu to make pudding. I'm pretty sure they have vanilla!

Hey Kree,

I got a couple of those Mori-nu mates. I've tried vanilla so far, and lemon creme is next. Vanilla was very good! It didn't taste like dairy vanilla pudding - it tasted tofu-ty vanilla. Good thing I like that taste! I tried your recipe for chocolate today, and realized that the chocolate covers up that tofu taste, which makes it more like regular pudding. That's a good thing, too. Those are my pudding notes today. I'll experiment with recipes, 'cause I much prefer to make my own than use a "mate" It's about as easy to add your own stuff to the blender as some packaged stuff, anyway.

Evie, I can't wait to hear what you come up with! You're right, I think the reason I like the chocolate pudding is that it covers up the tofu taste, too. I hope you find some way to make vanilla without that taste! That would be stupendous.
