Oatmeal Apple Nut Muffins (Makes 12 muffins)
I made these last night. They're so scrumptious... and healthy, too!
Ingredients: 1 cup rolled oats, not instant 1 cup apple, coarsely grated 2/3 cup maple syrup 1/2 cup plain soy yogurt or flavored soy yogurt 2 egg whites, beaten (or 1/4 cup Egg Beaters) 2 Tablespoons canola oil 1 1/4 cups all-purpose flour 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/3 cup walnuts or pecans, chopped
1. Combine oats, apple, maple syrup, soy yogurt, egg whites, and oil in a medium sized bowl. 2. In another bowl, combine flour, baking powder, soda, salt and nuts. 3. Fold the liquid ingredients into flour mixture until just combined; do not overmix. 4. Spoon batter into 12 large paperlined muffin tins. 5. Bake in an oven preheated to 400 degrees for about 20 minutes.
