BROILED SCALLOPS AND MUSHROOMS IN LEMON SAUCE
1/4 c. fresh lemon juice 2 tbsp. soy sauce 1/4 c. canola or olive oil (used for marinade so not all is eaten) 2 tbsp. chopped parsley 1 clove garlic, crushed 1/2 tsp. salt 1/4 tsp. black pepper 1 lb. sea scallops 8 oz. mushrooms, trimmed Lemon wedges for garnish
In a large bowl, whisk together lemon juice, soy sauce, oil, parsley, garlic, salt, and pepper. Add the scallops and mushrooms and coat well. Cover and marinate in the refrigerator for at least 1 hour but no more than 3 hours, turning occasionally. Heat broiler. Using a slotted spoon, transfer scallops and mushrooms to a lightly oiled broiler pan. Broil 5 inches from heat for 4 minutes. Turn, brush with marinade, and broil 4 minutes more or until cooked through. Garnish with lemon wedges and serve. web page

You COULD also string them onto skewers and throw on the BBQ. Or maybe even on a George Forman grill? I have a small one, maybe I should try it

This is delicious. I made it with bay scallops - I swear I read the recipe 3 times and never saw that it called for "sea" scallops. I marinated the scallops and 8 ounces of very large mushrooms caps then threaded them on skewers and grilled. The scallops and the mushrooms were delicious. I think sea scallops would be even better since they're bigger.
I served this with Lemon Rice Pilaf which went perfectly.
