Chicken skillet Stew

1/3 cup flour 1/2 tsp salt dash of pepper 1-1/2 lbs chicken breast cut into pieces 3 tbsp Ibs safe butter or margarine 1 med onion 3 celery ribs sliced 2 med potatoes peeled and qtrd 3 med carrots peeled and sliced 1 cup fat free checken broth or homemade 1/2 tsp dried thyme 1 tbsp ketchup 1 tbs cornstarch
Combine flour, salt and pepper in a shallow bowl, coat chicken. In a large skillet melt butter or margarine, brown chicken. Add onion and celery, cook for 3 mins.. Stir in potatoes and carrots. Combine broth and thyme ketchup and cornstatch, stir into skillet. Bring to boil. Reduce heat cover and simmer for 15-20 minutes or until veggies are tender. Serves 6.
This is soo delicious and the whole family will love it. Serve with rolls or sourdough bread and have a good time enjoying it.

Ooh, this looks so yummy! Do you think it would work if you reduce the margarine to 1-2 Tbsp, though? 3 sounds like an awful lot. Thanks for sharing this, sherr!
