Could Apple Sauce Be Substituted in Banana Bread?

Now that I've mastered Heather's brown sugar banana bread recipe (minus the sugar), I would like to make some IBS-safe apple bread.

Could I substitute three cups of apple sauce for the three cups of bananas in Heather's recipe? How much cinnamon would I add -- would 1 1/2 teaspoons be correct?

Please bear in mind I will not be using any sugar or any sugar substitute for the recipe. I can't have sugar and I don't like very sweet things anyway.

Please let me know. I am raring to do some baking again!

Belinda, I think you could sub applesauce for the bananas without a problem. I'm not sure how it would come out without sugar, though, because unsweetened applesauce is a lot less sweet than bananas. I guess you won't know unless you give it a try.
