Pierogie Casserole
4 oz lasagna noodles, cooked 1 onion, chopped 1 tsp Soy Garden Natural Buttery Spread (the original recipe called for 2 T butter..this is what I used to sub) 2 c mashed potatoes (The original recipe used leftover mashed potatoes. I made mine fresh with soy milk, salt, pepper, & small amount - probably like 1/4-1/2 tsp - of Soy Garden Natural Buttery Spread) 1 c grated soy cheddar cheese salt & pepper
Preheat oven to 350 F. Spray casserole dish with non stick spray.
Melt Soy Garden Natural Buttery Spread in non stick pan. Sauté onions till softened & beginning to brown.
Combine cheese & mashed potatoes, salt & pepper to taste. (I didn't add additional salt & pepper since they were already in my mashed potatoes.)
Layer noodles in bottom of casserole. Add a layer of potato mixture, then some onions. Repeat layer finishing with onions.
Bake to heat through, 15-20 min.
I served mine with a bit of soy sour cream.

I was just thinking I could go for some pierogies. I love them and was thinking about trying to change a recipe, if I can ever find one. My husband is Polish so we used to eat them all the time. Thanks, I will definatly try this one. Sounds easier than real perogies.

I know what you mean. Peirogies would be a perfect IBS staple if it weren't for the cheese! I've never seen any at the store that didn't have cheese. I have a coworker who is Polish & he tells me his mother who was from Poland used to make them without cheese. He thinks having cheese in them is weird. LOL I think it just gives him something else to complain about...he's usually pretty grumpy. LOL

Heidi - I'm half Polish (my Mom was born in Poland). She used to cook Polish dishes, like Procus (stuffed cabbage with ground beef in a sweet and sour sauce--kinda like Chemigurl's sweet and sour cabbage soup/stew). But, now she's gone and so is the Polish food! Does your husband have a source for Polish food recipes?

I forgot (and of course I remembered TODAY! ) I halved this original recipe, so obviously this could be doubled. Or probably even tripled. We only have 2 here though, so this version I posted is plenty for us. Sorry for any confusion!

No, I don't have a source of Polish recipes. My husband's father is Polish and his mom died after childbirth when he was I think 18. My husband's grandfather passed away a couple years before we started dating. I know he love the cabage rolls but I haven't attempted them. I keep thinking of making the soup but haven't yet.
Mag, Mrs. T. makes a garlic pierogie that has no cheese. I just can't handle that much garlic.

Heidi - the sweet and sour soup is great. I've already made it twice and I have some in the freezer for a quick meal.
