Don't mean to insult anyone, but could cooking wine be substituted for the bourbon? I don't drink so I hate buying a big bottle of something I won't use much of. I've had a bottle of some irish liquor to make Roscommon Bread, and I have that for about 5 years! Thanks, Joan

I'm not familiar with Irish liquor, but I would not hesitate to substitute wine. Without either, however, I don't know about whether there would be much flavor, DESPITE all the seasonings. According to Mike Roy (the author of that cookbook from whence that recipe came-ith), you need a LOT of flavorings because stuff in crock pots comes out pretty bland.
Having said that, aren't most liquors rather pungent or sweet? (I wouldn't know; I'm only a Jack person myself!) You might try it, after all what do you have to lose? I'll bet the flavor might even come out better! (Unless, of course, you were using Jack!)
