This recipe was adapted from Brita Housez, "Tofu Mania", Centax Books, Saskatchewan, 1998. Believe it or not, this recipe contains ONLY 19% fat per serving!
LEMON SQUARES
BROWN SUGAR CRUST: 1 cup flour 1/4 cup rolled oats 2 tablespoons wheat germ 1/2 cup brown sugar 1/3 cup Soy Garden "butter," softened
LEMON FILLING: 3/4 cup Egg Beaters 1/2 cup soft tofu 2 cups sugar 1/4 cup flour 1 teaspoon baking powder 1/2 cup freshly squeezed lemon juice Zest of 2 lemons Confectioner's sugar for icing sprinkling
Preheat oven to 350 degrees. Lightly grease a 9x13" baking dish.
In a lg. bowl, combine all crust ingredients, using a pastry blender to mix in "butter." When mixture is evenly crumbly, press over bottom of baking dish. Bake 15 mins.
Meanwhile, in a medium bowl, with a hand blender, whirl together Egg Beaters and tofu. Add sugar, flour and baking powder, and stir until smooth. Gently mix in lemon juice and zest. Pour filling over hot crust.
Bake 30 minutes, or until edges are lightly browned and filling is set. Cool completely before cutting into squares. Sprinkle with "icing sugar."
Makes 24 squares. Per square: 144 calories, 3g. total fat.

Hi, I'm going to do my best to participate on this board more often. Seems like every time I start to do so I have another bad period of lots of bloating, pain and severe constipation. Then I feel so awful and get so bummed out that I have no enthusiasm for cooking or baking, both of which I like to do. So, I'm hoping that getting more involved here will help me during my "down" episodes.
Also, I'm getting so tired of eating the same foods day after day, I've lost 12 Ibs since last July and I was already thin [5'9 and 122]. All my friends are concerned but they say that they just can't deal with preparing food per this diet when I visit; they all say it's much too complicated. Even worse, if we go out a number of them have said that they think I've become neurotic about how I eat. Of course, these reactions are adding to my feeling very discouraged and it's not helping my social life at all. I basically don't do anything unless I can bring my own food! Is this how others' friends react???
Did anyone ever make these lemon squares? I used to love them but haven't dared bake my old recipe since learning about H's way of eating.

If my friends acted that way, I'd find new friends. Sheesh. Not to say your friends are awful people, but I've NEVER had a friend tell me that my way of eating was too complicated... most of them do what they can to accomodate me, and none of them would DARE say anything about the way I eat in public.
Anyway, enough of that... unsupportive people is one of my "buttons", as if you couldn't guess that.
I'm sorry to hear you're feeling so poorly, but glad to hear you'll be around more. I think the support on this board is an invaluable resource - it's definitely helped me when I've been "down" about this IBS thing... and believe me, I've been blue about it quite a lot.
I haven't tried this recipe yet, but it sounds fantastic! Give it a try!

Thanks, that the kind of feedback I want to know! My main problem is with one specific person who has a BIG mouth. I AM starting to avoid being with her, sad to say, b/c we go back knowing one another for 10 years. However, she is proving to me more and more with time that she's not the kind of friend I want, or moreso, need!!
I re-posted this question to the main board [to hopefully hear from more people about how others react to their special food needs]
I do hope that if anyone made the lemon squares they'll reply to this post.

No I made these a few times (with egg whites or egg beaters) glazed lemon bars
They are on the counter now and DH loves them so much they will be gone real soon.
-------------------- IBS-A for 20 years with terrible bloating and gas. On the diet since April 2004. Remember this from Heather's information pages:
"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!
