The BEST Baked Potato Soup Ever!

Tired of my recipes yet?? Lol. Okay, I didn't name this recipe myself, but it's definitely aptly named. It's so thick and delicious! Perfect Winter comfort food, especially served with crusty bread.
The BEST Baked Potato Soup Ever! (Makes 4-6 servings)
2 medium potatoes (about 2 cups chopped) 2 Tablespoons soy margarine (oil might work too, but I'm not sure) 1/2-1 cup diced white onion 2 Tablespoons flour 4 cups chicken broth 2 cups water 1/4 cup cornstarch 1 cup instant mashed potatoes 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon basil 1/8 teaspoon thyme 1 cup soy or rice milk shredded cheddar soy cheese, to garnish
1. Wash potatoes thoroughly and microwave until tender. (I poked them with a fork first and it took 10 1/2 minutes on HIGH in my microwave) 2. If you would like you can always bake in a 400 degree oven for one hour or until done. 3. As the potatoes are cooling, melt your margarine in a large saucepan and saute your onions until light brown. 4. Add in your flour to make a roux. 5. Add in your chicken broth, water, cornstarch, instant mashed potatoes and spices and bring to a boil. 6. Reduce your heat and simmer for about 5 minutes. 7. Take your cooled potatoes and peel off the skin and chop up into desired pieces. 8. Add in your chopped up potatoes and the soy or rice milk to your soup and bring it back to a boil. 9. Reduce heat and simmer for about 15 minutes or until it is thick. 10. Garnish with soy cheddar cheese. 11. ENJOY!

Thanks Joan... I'm glad you're enjoying my recipes! I'm only taking 2 classes this semester, so I have to amuse myself somehow, and it's been cooking and baking lately. Until I start subbing, that is!

And yet again another WINNER from Kristen….
Never, never, ever tired of your recipes.............Are you kidding? Where'd you get that idea? You just have the knack for knowing what sounds good to all of us and coming thru with it. Hey, load up that freezer now……….when you start subbing you're going to need those comfort foods (and maybe one of Bev's Jacks) just to get over some of those days. With as cold as it's been in your neighborhood I'd think you'd be eating hot soup for breakfast, lunch AND dinner!!!!! I would!
BTW, did you see the test question I posed (for you and anyone else that wants to compute it) on the percentage of fat in the Williamsburg gingerbread cookie recipe? (You just sort a prompted it, you know. See, it's all your doing… .). I think you'll be surprised. Not going to say you're theory is right or wrong, just that you'll be surprised……..How's that for being evasive?
From one who NEVER met a potato in any form I didn't like, thank you…
