Ok, many here may already know this, but Egg Beaters and White Bread make an excellent French toast.
1/2 c Egg Beaters 2 slices of white bread
Dip bread in Egg Beaters (works out to 1/4c per each slice) and place in Pam-coated frying pan.
These are so yummy and so easy! I sprinkle with a bit of brown sugar, honey or powdered sugar.
For those who are concerned about their high-carb intake, the Egg Beaters balance that out with the 12 grams of protein.

Hi Jules! I experimented tonight by making french toast coated in some vanilla soymilk, egg whites and vanilla extract. Then I made a bananas foster sauce ( really had no idea what I was doing so didn't measure, but it was basically some brown sugar, a little cinnamon, some vanilla soy milk, a tiny bit of canola oil and a little maple syrup.) I diced some carmelized walnuts and bananas and cooked them in the pan for a few minutes in the sauce. YUMMERS!! Time will tell if the soymilk will bloat me like a whale-but hopefully I"m on to something here! Just thought I'd let you know your idea sprouted a successful meal for me! Thanks! Linda

i Wonder if whole wheat bread will work just as well, especially with the acacia to back me up? I am going to give it a go, anyway.
