Pumpkin Oatmeal - a soothing breakfast, and YUMMY!

1 Cup soy, rice or almond milk, either plain OR vanilla 1/4 Cup brown sugar (firmly packed) 1/4 Cup pumpkin, canned 1 Tsp vanilla (omit if you used vanilla flavored milk substitute) 1/4 Tsp cinnamon, ground (or pumpkin pie spice) 1 Cup oatmeal, rolled oats 2 Tsp peanut butter, smooth (optional) Maple Syrup (optional)
1. In a small saucepan, combine the milk substitue, sugar, pumpkin, vanilla and spice. Bring to a gentle boil and stir in the oatmeal. Reduce the heat and simmer for 2 to 3 minutes, until the oatmeal is soft and creamy. Stir in the peanut butter, if desired. (I skip the peanut butter because peanuts are a trigger for me, and I'm not sure if peanut butter will have the same effect)
2. Spoon the oatmeal into bowls,and serve warm with maple syrup (it is sweet enough without the maple syrup, though).

How many servings would this make? I am assuming at least 3? Just wondered because if I made it I would need to cut it down to one serving, for myself. Thanks.

I don't know for certain . . . 3 servings seems about right.
