Safe cake mix ?

I am new here & newly diagnosed, and at the moment pretty much afraid to eat anything but plain chicken breast & white rice. SO glad I found this site. Anyway, I am really missing sweets, and saw several references to "safe" cake mixes. What constitutes "safe" ?? Thanks !
ps - dropped below 100lbs today, so I need some calories !

You want cake mixes without dairy (or any other trigger foods but dairy is the one you're most likely to find in a box mix). I've never had any trouble with Duncan Hines mixes. Make them with egg whites instead of whole eggs. The oil the mixes call for will add fat and that may bother you. Here's a thread about substituting for the oil:

I wonder if you can use the Duncan Hines Spice Cake mix? If so I could make a 2 ingredient muffin. Using the Duncan Hines spice cake mix and can of pumpkin puree. Mix and bake and makes delicious muffins. I made this before I was diagnosed and was wondering if it was okay? They are simple and really tasty! Tell me what you think?
