I have this chicken pot roast recipe that I would like to make. It calls for boneless skinless chicken thighs. Do you think this would be OK? I could use the boneless skinless chicken breast but I thought something different for a change would be nice.

It is very possible that a low fat meal with dark meat might be fine for you, but only try it if your gut is in a good way.
