I found this recipe in Healthy Taste of Home and wanted to share with everyone. The original calls for celery and green onions to taste. I thought it was great all by itself though .
Potato Soup:
4 medium potatoes (peeled and diced) 4 cups chicken broth ( I used granules )
Heat chicken broth to a boil. Add potatoes and boil for 10 to 15 minutes until potatoes are tender. Transfer half of mixture to a blender and blend until smooth. Pour back into pot with remaining mixture and heat through. Enjoy!

This is an absolutely wonderful recipe! I first learned this simple one when we had a recipe exchange at our Women's Christmas luncheon about 4 years ago.
Our children's pastor was the source of this inexpensive, quick and easy basic recipe. Given she is a single senior living alone, she did this with 3 potatoes and three cups of water (suggesting the chicken stock granules, just as you used).
In addition, one can top with one or more of the following when serving:
- Crumbled cooked turkey bacon
- Chopped green onion tops
- Chopped chives
- Chopped parsley
- A sprinkling of paprika
A variation is to add a can of minced clams (including the liquid) to this when the potatoes are cooked and partially processed as you describe, then adding a little plain soy or rice milk. This produces a wonderful white clam chowder! (topped with any of the garnishes listed above when serving).
Potatoes are so very versatile and very inexpensive. You can even use potato flakes (not the granules) to thicken gravies and other creamy soup recipes.

Thanks for the ideas! I will have to try them sometime. To satisfy everyone this Christmas, I decided to make this and save some for myself while adding ham and shredded to cheese to the mens. I don't anticipate any complaints.

Sounds tasty. I may have to try the clam chowder variation. A small amount would be perfect as my husband does not like seafood. (Oh well, nobody's perfect.) It would be all mine.
