Ruchie - do you ever make any Jewish sweet and sour dishes? My Mom used to make Procus (ground beef w/rice in it rolled in cabbage leaves in a sweet and sour sauce) and she always used sour salt. She was from Poland and it may be a Polish dish--I don't know. Sour Salt is just about extinct, I think, because I can't find it any place except in, you guessed it, The Bakers Catalogue. It's actually not salt at all but citric acid, a bitingly sour substance that lends extra tang to foods.
Everybody should know the website by heart by now so I'm not gonna repeat it.
