Applesauce Muffins

These muffins are absolutely delicious for breakfast or a snack!!
First, mix together the following ingredients: 1 cup sugar 1/3 cup canola oil 2 egg whites
Combine and add to the above mixture: 1 cup applesauce 2 cups flour 1 tsp baking soda 1 tsp cinnamon 1/2 tsp salt 1/2 tsp cloves
Pour in muffin tins and bake @ 350 degrees about 20 minutes or until a toothpick inserted in the center comes out clean.

These are great.. I made them up this weekend and people at work want me to make some for them too..Unfortunately it was chunky in places and I'm not sure if it was suppose to be or if I did something wrong... Maybe I didn't mix the batter enough?

Gonna try these today, what sort of flour do I use, is it just plain flour or self raising? Sorry, I am new to all this baking thing! xxx

I used just plain old all purpose flour, although make sure there aren't any lumps or it tastes kinda chunky which isn't all that fun.. unless you like that sort of thing.. I didn't mix mine well enough and now have little balls of flour (which is cooked) but like i said, chunky....

These are good! I made them a few hours ago and I used ground cloves instead of whole cloves 'cause I hate fishing things out of baked goods.

I just made these muffins and they are AMAZING!!! I was out of white sugar so I used 1/2 cup of brown sugar instead. Well I don't know what these are supposed to taste like, but these are simply fantastic with the brown sugar! Nice and moist and cake-like. Will DEFINATELY make again!

How long did you bake the applesauce muffins for, in a loaf pan? I think I would rather do this too, than the individual muffins.

I am trying to figure out a way to really have a muffin that isn't too sweet like this one. Did the brown sugar make it less sweet or was it still really sugarry.
