Vanilla Pudding Recipe

Anyone have a recipe for a basic vanilla pudding recipe? I really like to freeze my puddings into ice cream and eat them when my stomache is upset. I know Heather has a recipe for pudding that sounds great, but I haven't been able to find vanilla bean anywhere . I am looking for a recipe that calls for vanilla extract and rice milk.

Homemade Vanilla Pudding
INGREDIENTS (Nutrition)
2 cups milk (sub rice milk)
1/2 cup white sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon butter (sub smart balance light or safe butter)
DIRECTIONS
In medium saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt. Pour into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving. Serves 5

Thanks, Butterbean! This sounds great! I will definitely try. I do believe almond milk would work also. I have used almond milk in other pudding recipes(even cook and serve) and they all thickened up quite nicely(I didn't much care for the flavor of almond milk hence why I wanted one that used rice milk ).
