Hi! I found this receipe in my Southern Sideboards Cookbook! It's fantastic, and I have a feeling it would be excellent over rice! Hope you enjoy!
2 slices turkey bacon (chopped) Or just a little olive oil 1 Medium-large Onion (chopped) 1 Medium-Large Green Bell Pepper (chopped) 1-28 oz can of Whole tomatoes (chopped, juices reserved) 1 Head of Cabbage (chopped) Salt & Pepper to taste 1/3 Cup Vinegar Cayenne Pepper to taste
In a large frying pan, fry turkey bacon (or just use a little olive oil instead of using the bacon)Allow to cook for a few minutes then add onion, bell pepper, and tomatoes with juice. Stir. Add cabbage, vinegar, and spices to taste, stir and bring to a boil. After boiling, cover and simmer for about 45 minutes (could be longer if desired).
It is so good! I made it yesterday for Memorial Day!

Fruit Stacks:
Stack layers of fruit (I did 1 slice pinapple, 1/2 pear, 1 slice of peach, some raisins, and sprinkled some crushed graham crackers over the top) Then mix together just a little bit of melted butter substitute, brown sugar and a splash of rum and drizzle over fruit stacks. Bake in 350 degree oven for 10-15 minutes and drizzle some more juice over top, I served with rice dream Ice cream... MMMMMMMmmmm so good!
