I need to start trying some ice cream and sorbet recipes!

Ok....so here's my favorite recipe.
I take one cup of rice milk and 1/2 cup of sugar and wisk them together. (Although I am not sure I really need that much sugar--I've done 1/4 cup and been fine)
Add a pint of Silk Soy Creamer(I buy vanilla so I don't add extra vanilla) and mix.
I put it on for about 20 min and then add anything I want! Fresh fruit is great. I sometimes make the anti-depressant brownies and break those into the mix for the last 5 min of mixing.

Have fun! I LOVE making ice cream now.

Chocolate Sorbert... low fat and yummy

1 c sugar
3 c water
2 T acacia fiber (optional)
3/4 c cocoa powder
1/4 teaspoon salt
2 teaspoons vanilla

Heat sugar until it melts and begins to carmelize. Stirring frequently. Lower heat and add water, cocoa powder, acacia fiber (if using) and salt. Mix well and let cool about 2 minutes. Add vanilla and chill in refrigerator. When cool place in ice cream maker and process .

I found that the lemon sorbet in the book worked well. Apparently if you're using non dairy products or doing a sorbet you should stir the maker more frequently. That sorted out the problems with my experiments.
