Hi everyone! Someone asked this on the IBS Diet board, and I was curious as well. Maybe some of you recipeers could help us out.
What is the difference in White/Unbleached/Wheat flour. And which ones are better for IBS or have more SF? More IF?

White flour is wheat flour. The wheat has the IF parts removed before being made into flour so white flour is SF. That means it's easier on your IBS like all SF.
Whole wheat flour is different. The IF parts of the wheat are not removed before it's made into flour and so it's high in IF. It can be a good source of the IF everyone needs some of but cannot serve as your SF base - treat it like any other IF source.
Unbleached flour is just white flour that hasn't been bleached. It doesn't look as glaring white as regular white flour. It's SF, too, of course but is preferable for IBS because bleaching flour just adds another chemical. In general, the fewer the chemicals the better for IBS.
Here's a link to Gold Medal that shows you four kinds of flour:
Whole Wheat All-Purpose (this is white flour) Bread (this is white flour with extra gluten) Unbleached
Gold Medal
