Hi

I was wondering if any one had any luck (or cautionary tales of disaster) concerning freezing the cakes and breads form the IBS cook book. I know the peppermint cake freezes well but what about the others?

I've frozen the banana bread, zucchini bread, and pumpkin apple bread from Heather's book and they all do fine. I wrap them in waxed paper, then in aluminum foil, then put them in plastic bags. Probably overkill but that's how my grandmother wrapped her quick breads so that's how I wrap mine.

The only thing I've found is that sometimes the top gets a little damp when it thaws but it doesn't affect taste or texture.

Also the baguettes should freeze fine.

HTH.
