Anyone know how long herbs and spices last?
I was preparing to make the cabbage soup and realized some of my herbs are pretty old. I'm just trying to figure out if I need to buy new ones.

Thanks so much for the search. I didn't know that herbs could last so long! What other insoluble fibers can you tolerate?

I eat them often, so I really don't have one that I have to stay away from. Did you know you can kind of build up a tolerance? I just make sure they're well cooked, chopped, with soluble - you know, the standards. I can eat well cooked asparagus, pureed beans. I like to make the non-dairy alfredo sauce with cooked chicken & broccoli florets - check my past posts on that one. Sometimes, I'll make green or yellow squash & leave the skins and steam it really well in the microwave. I puree roasted red peppers for sauce. Heather's pureed asparagus lemon sauce from The First Year is great! I made a similar artichoke one based on that - check past posts on that one too.

That's all I can think of right now. Are you having trouble trying to figure out which ones will work for you? What veggies do you like?

I'm just so afraid of setting off another attack. I did O.K. with the cabbage soup last night. I like lettuce, carrots, beans, squash, cauliflower, and there are a lot of fruits that I also like but am afraid to eat. I know I need vitamin c though. I do eat bananas and applesauce. Any other suggestions? I check out the postings you listed, and thanks for all your help. Oh, do you eat much whole wheat?

Hi Joan, So you liked the soup, didja? It's yummy, eh?! Didja brown the "meat"balls first, and if not, what was the consistency -- were they too firm? Were they done well enough?

Heather suggested to me that I make a smoothie with fruit -- you know, throw some fruit in the blender and add some soy milk and protein powder. YUM! How 'bout that for you?

I had given up whole wheat, but yesterday I had one slice of whole wheat toast and it didn't bother me. Yaay! As for the lettuce, well, I gave that up permanently. I don't miss it. Besides, I heard there's almost no nutritional value in head lettuce -- more in romaine -- best is spinach, but we can cook that. HEY! There ya go! Cooked spinach -- with a little vinegar sprinkled over it. YUM! Hey, I'm gonna try that -- sounds great, doesn't it?!?

Actually, the carrots & squash (minus the skin) are soluble fiber. Do you have Eating for IBS? If so, try the Salmon with Wheatberries recipe. It uses musculen, or spring mix lettuce. It's one of my favorite recipes - it's SO good! Lately, I've been eating some clementines. I like them, because they're small. I'll have one after lunch or dinner, like a dessert. Also, try making breads. You can get lots of insoluble safely in that way. I don't eat whole wheat bread, but I make Heather's apple spice bread (from First Year), and it uses some whole wheat pastry flour, so it's a good way to incorporate it in. Another orange cranberry bread (can't remember the 'official' name right now) uses cranberries, and those have vitamin c. Also, try smoothies. I use Heather's banana strawberry as a guide, and make up different flavors. I always use the banana, because of the soluble fiber, but I'll mix & match usually berries & peaches.

I did brown the meatballs and actually added to chopped portabello mushrooms to the meatballs since I like mushrooms and got the idea from our friend Rachael Ray. So I had no probkems with the meatballs coming out.
I'm not sure I got everything right; is it supposed to be very thick with little broth?
I do appreciate all the help with trying to get my insolubles in. I so like spinach but have been hesitant to try it. I still get regular attacks eating a very restricted diet, so wonder what will happen if I add in riskier foods.

I do like smoothies, and we have a smoothie maker with frozen fruit mixes you can buy. So berries are O.K. as long as they are blended? I love raspberies and blueberries. I do have the book and recipes so I will try to refer more to them.

Oh yeah, the bluberries and raspberries are ok, try peaches too. I do the bread quite often because I can't have to much
fiber in my diet. Like banana bread or zucchini bread, to get some fruit into your diet try whole soy yogurt, there is strawberry, blueberry, lemon and peach, raspberry, plain.
I like to have a sliced sourdough bread toasted with one of these yougurts smothered on top for breakfast or a snack.

Just make sure on the raspberries you get them really blended. Sometimes their seeds are hard to blend. I tried using them in a smoothie once, but didn't like the texture.
