I made the Mango Salsa last night and it was to die for, I also made the gaucomole and bean dip (with kidney beans), I used this inside fajitas. Oh it was so delicious. Instead of the shrimp ones in Heather's book I used chicken, I marinated it the same. It was all so easy and didn't take long at all to make. My 17 yr old loved it! I will never go back to store bought salsa again. Thanks Heather Trish

Hi Trish - I have only found one Mexican restaurant in my life that I like as much as Heather's cooking and that is the Cactus restaurant in Madison Park here in Seattle. This place is really something, so if you ever happen to be in the neighborhood, you won't want to miss it.
When we want to have a special time together, we make our own Mexican fiesta with marinated catfish fajitas and grilled onions, mango salsa, black bean dip, and guacamole.

Trish: did you chop up the chicken first or marinate them whole? How did you cook the chicken to make it tender? This sounds like what I need for 15 people this weekend!

HI It was already chopped up raw chicken, chopped in small pieces. Then I just cooked it under the grill (I think in America you call it the broiler)? It only took a few minutes as it was cut up into small pieces. I also put some garlic salt on it while it was cooking and some ground black pepper

Depends on how fast you drive. LOL!! I live about 1 hours drive or ferry ride from Seattle and I think it takes 3 or so hours from my house to Portland.

Peanut is right. It take about 3 hrs from Portland to Seattle.
