GOOD tasting CHEESE VARIATIONS PLEASE???

Does anyone have any good cheese variations? I am so upset that I cant have cheese now and Im itialian so we use a lot of it. Does anyone find a sprinkle of Parmesan or just a touch of cheese causes a issue? Im afraid to test the waters although I have lactaid pills here.. I know a large amount would be way to heavy and cause some issues but what about a sprinkle ?? Also I tries the soy cheeses and sorry but YUCK!

ANy suggestions Its so hard to not cook with Cheese toppings etc. Thanks.. Lisa

Try Joanne Stepaniak's "The Uncheese Cookbook" - it's full of lots of vegan recipes designed to satisfy and replace the craving for traditional dairy sauces and spreads. Her crock cheeze is wonderful, I've served it at parties many times and no one knew it was tofu based. Also if you can find FOllow Your Heart vegan cheeses, they are very good substitutes.

As far as "real" cheese goes, I find that I can eat high end, non-animal rennet parmesean cheeses in small amounts when I'm not having my period - also goat cheese in small amounts does not bother me. HTH!

rice cheese is ok the slice melts better than the shredded it contains cassein though. I'm with you the soy is gross but I bought soy parm in a shaker its cassein and dairy free and its ok. I wish I could find some mozz or swiss thats taste good and thats cassein free. hth

All the Lisanatti varieties I've tried are good. They make soy, rice, and almond cheeses.

Even a sprinkle of cheese puts me into a fit! I am searching for a vegan formula . . .
