You can sub cornstarch for arrowroot, same amounts.

I made the pistachio version - 2 packages of Jell-O Instant Pistachio Pudding and 3 cups of Silk. It churned for about 25 minutes and it's wonderful. It doesn't have the nice high-fat mouth feel of store-bought soy ice cream but it tastes so good I don't really care.
The ice cream was definitely soft-serve consistency when it came out of the ice cream maker. We ate some (of course) and I put the rest in a plastic container and stored it in the freezer. As the Website warned,it hardened to a rock-like consistency - it takes about 15 minutes out of the freezer for it to soften enough to scoop. Next time I think I'll store it in serving-size containers in the freezer rather than in one big container.
