If you don't mind me asking when you tried this with the ranch what kind of ranch did you use? And what sides did yopu have with this? thanks

Okay, you caught me and I'm going to have to 'fess up: I used real Rach dressing. Bad, bad, naughty, naughty, but I had some in the fridge and I really wanted to try this chicken. I promise not to do it again.

The first time I served this with my variation on Crispy Potato Wedges. I make them with a little olive oil and garlic salt.

The second time I served this with Baked Lyonnaise Tatoes - I love these things.

Right after I had my gall bladder out, my surgeon recommended no more than 12 grams of fat per day . . . I devised a similar recipe:
Nearly low fat Honey-Mustard chicken nuggets!!!
3 boneless skinless chicken breasts, trimmed of all fat & cubed
2 tsp skim milk (now I would try almond milk)
3 tsp dijonnaise (or similar)
2 tsp honey
1 c. plain bread cumbs
Garlic powder, onion powder, fresh ground pepper & salt to taste

Mix the wet ingredients in a lidded container. Add Chicken. Shake vigorously. leave to marinate for 30 to 40 minutes, minimum.

Blend dry ingredients on a plate.

Spray a non-stick baking sheet w/ cooking spray.

Dredge chicken through crumb mixture and bake at 300 til done.
