Okay, you caught me and I'm going to have to 'fess up: I used real Rach dressing. Bad, bad, naughty, naughty, but I had some in the fridge and I really wanted to try this chicken. I promise not to do it again.
The first time I served this with my variation on Crispy Potato Wedges. I make them with a little olive oil and garlic salt.
The second time I served this with Baked Lyonnaise Tatoes - I love these things.

Right after I had my gall bladder out, my surgeon recommended no more than 12 grams of fat per day . . . I devised a similar recipe: Nearly low fat Honey-Mustard chicken nuggets!!! 3 boneless skinless chicken breasts, trimmed of all fat & cubed 2 tsp skim milk (now I would try almond milk) 3 tsp dijonnaise (or similar) 2 tsp honey 1 c. plain bread cumbs Garlic powder, onion powder, fresh ground pepper & salt to taste
Mix the wet ingredients in a lidded container. Add Chicken. Shake vigorously. leave to marinate for 30 to 40 minutes, minimum.
Blend dry ingredients on a plate.
Spray a non-stick baking sheet w/ cooking spray.
Dredge chicken through crumb mixture and bake at 300 til done.
