This recipe is so fast and easy! I'm not sure if anyone has posted one like this before but I'm posting it anyway.
1 Tbsp. oil 1 lb. boneless skinless chicken breasts, cut into bite-sized pieces 1-1/2 cups chicken broth 4 tsp. soy sauce 3 cups frozen stir-fry vegetables
1-1/2 cups instant white rice, uncooked Heat oil in skillet on medium-high heat. Add chicken; cook and stir 5 min. or until cooked through. Add broth and soy sauce. Bring to boil. Stir in vegetables and rice; cover. Reduce heat to low; cook 5 min. Stir before serving. Sprinkle with 1 green onion, sliced, if desired.
Prep time: 5 min Ready In: 20 min Serves: 4

I would try a low sodium soy sauce or hoisin sauce. If those are not an option you could even try leaving it out altogether and just using the chicken broth. Also you could sprinkle a little paprika or ginger.

If you can't use soy sauce because of the wheat (gluten) in it, tamari soy sauce is safe - no wheat in it.

Amy,
Thank you for clearing this up for me. So, I have IBS-A. I ordered Heather's book from my bookstore. Didn't realize I could order it here. At least I'll have it. Sure can use the help!
