Foil Chicken & Veggies new

As a child my mother fixed foil dinners frequently--normally using ground beef patties. In the last month I have perfected the chicken foil dinner and it is tasty and easy:

Take 1 tsp. of olive oil and mix it well with 1/3 tsp each paprika, cumin and ground thyme. Cut up a potato into bite size pieces and drizzle the oil mixture over the potato in a bowl with a top. Put the top on the bowl and shake the bowl to coat the potato with the oil and spices. Dump the potato into the center of a large piece of foil. Add other veggies of your choice (I use carrots, squash & mushrooms in small quantities). Top with an organic boneless, skinless chicken breast and a very thin slice of white onion. Place another piece of foil on top and seal the two pieces of foil by folding them several times on all four sides. Bake on a cookie sheet at 400 for about 45 minutes. Enjoy.

Do you know if it could be done with fish, too, and how much to adjust the cooking time?

Fish works, the potatoes and carrots need the full 45 minutes to cook or close to it. I add the fish about 25 minutes into the cooking process.

Mine turned bland and dry. I followed the recipe. I don't know what happened. I think I will try again to adjust the spices and maybe add some garlic. Hopefully the chicken will not be dry the next time.
