Chocolate Muffins (from Simple & Delicious Magazine - submitted by Carol Gaus, IL)
1 1/4 cups all-purpose flour 1/2 cup sugar 1/3 cup baking cocoa 1 tsp baking powder 1 tsp baking soda 1 cup unsweetened applesauce 1/2 cup soy milk 1/2 cup egg substitute (or 4 egg whites) 1 tsp vanilla extract 1/4 cup sliced almonds (optional, for garnish)
In a bowl, combine the flour, sugar, cocoa, baking powder and baking soda. In another bowl, whisk the applesauce, milk, egg substitute and vanilla until smooth. Stir into dry ingredients just until moistened.
Coat muffin cups with cooking spray; fill 3/4 full with batter. Sprinkle with almonds. Bake at 400 degrees for 20-25 minutes or until muffins test done. Cool for 10 minutes; remove from pan to a wire rack.
Yield: 1 dozen

they just went in the oven! I'll let you know how they are...the batter was kind of yummy...LOL. Anything is yummy when you add chocolate chips!
I love baking on SNOW DAYS!!!!
Well, they are out and I just ate one...they're not fabulous, and not too chocolatey...so I put frosting on them and now they are cupcakes! LOL
