Asian fushion ideas?

I am making this soup this week. Spicy Coconut Soup with Spinach and Shrimp
Curry paste and crushed red pepper give this soup a double dose of heat that's balanced by the coconut milk.
Cooking spray 2/3 cup chopped onion 1/2 cup chopped red bell pepper 2 garlic cloves, minced 1 1/2 teaspoons red curry paste 1/4 teaspoon crushed red pepper 2 (14-ounce) cans fat-free, less-sodium chicken broth 1 (14-ounce) can light coconut milk 1 pound medium shrimp, peeled and deveined 6 cups torn spinach
Heat a medium saucepan over medium-high heat. Coat pan with cooking spray. Add onion, bell pepper, and garlic; sauté 4 minutes. Add curry paste and red pepper; cook 1 minute, stirring constantly. Stir in broth and coconut milk; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes, stirring occasionally. Add shrimp; cook 4 minutes or until shrimp are done. Stir in spinach; cook 2 minutes or until spinach wilts.
Yield: 6 servings (serving size: about 3/4 cup)

and I want to make some sort of Asian bruschetta to go with it. Like garlic toasts with Asian veg and sauce on it. Any ideas?

Well bruschetta is garlic toast, oil, cheese and occasionally sauce, right?
So, perhaps have something like a rice cracker, or a piece of dried seaweed (kohmbu, or the like), topped with some soft marinated tofu and some high quality soy sauce?
Just brainstorming a bit!

The fushion bruschetta turned out fabulous. Here is how I made it (there was too much topping so I have adjusted it here for 1 loaf of baguette.)
1 pakage shittake mushrooms (stems removed), finely chopped 1c. dried oriental mushrooms (pour hot water on them and let sit for 15 minutes- drain but save the liquid), finely chopped 1/2 red pepper, chopped 1/2 yellow pepper, chopped 2 bunches scallions (or less), finely chopped garlic to taste, minced 3 splashes soy sauce 3 splashes mirin (chinese cooking wine) 1 splash rice vinegar 2 splashes mushroom soaking liquid or as needed to be as liquidy as you want. In a saucepan add mushrooms and peppers and garlic, cook down. Add scallions and sauces. Meanwhile diagonally slice a baguette, brush with a tiny amount of oil and toast in 400 oven for a few minutes. Top each slice with mushroom mixture when it is cooked as you like.

I think this meal is great in winter and good enough for company. Spicy Coconut Soup with Spinach and Shrimp

Other brands are not so hot and need more)Available at grocery stores. 1 minced serrano pepper 2 (14-ounce) cans fat-free, less-sodium chicken broth 1 (14-ounce) can light coconut milk 1 pound medium shrimp, peeled and deveined (I would use about 1.5 pounds little bit smaller shrimp. It makes it easier to eat. Can be precooked or raw.) 6 cups torn spinach

Tamara's Asian Bruschetta 1 loaf baguette sliced diagonally 1c or little less dried chinese mushrooms (these are pretty cheap) 1package shiitake, stems removed finely chopped 1/2 red pepper finely chopped 1/2yellow pepper finely chopped 1c finely chopped scallions 2 cloves finely minced garlic 3T soy sauce 3T mirin (chinese sweet rice wine available at most supermarkets) 1T rice vinegar 3T mushroom soaking liquid (see below) Pour boiling water over dried mushrooms and let soak about 15 minutes. Drain but save liquid and finely chop mushroom caps. In a small pan with cooking spray add mushrooms and saute 4 minutes, add remaining ingredients and saute until cooked and well mixed. Meanwhile spray olive oil Pam on baguettes and toast in the oven. Serve the topping on the baguette slices. It is slightly sloppy but super tasty!
