Tamara's Minnesota Boiled Dinner

This is my take on my mom's New England Boiled Dinner. My husband hates it like crazy (mostly from the name which he makes fun of) so I made it just for me and have eaten it for 3 days. It was awesome!
1 small rutabaga, peeled and cut into crouton sized chunks
2 parsnips or so, cut a little bigger
2 large carrots or so, cut about the size of parsnip or a little smaller (baby carrots don't have enough flavor, use the big ones)
2 small to medium russet type potato or Yukon Gold(optional -I didn't use it but it would be just fine) cut a little bigger than rutabaga
1 onion, any kind, thin vertical slice
few sprigs thyme, tied in bundle
6-7 cups veggie or chicken stock such as Kitchen Basics (if you don't have good stock then put the broth in first and reduce a little to about 6 cups. I mean the canned stuff just doesn't add the flavor the better kind does.)
1t kosher salt
1/2t white pepper
Combine above and the veggies should cook evenly if cut as described. Bring to boil and simmer covered until they are nice and soft.
1 bunch curly kale, coarsely chopped
1/2 turkey ham cut into bite sized chunks
When veggies are soft add kale and ham and heat for about 10 minutes or until kale is cooked to your liking. This seems easier to digest than the standard cabbage and is so good for you. The stew is beautiful, orange, green and pink and so bright! It is an excellent GF meal. Also the turkey ham adds so little fat that there is none on top when it is chilled. Keeps well 3 days. Second day it is more flavorful.

This almost reminds me of Canadian Newfie boiled dinner (also known as "Jig's Dinner", although it seems only non-Newfies use that term):
- turnips
- carrots
- potatoes
- cabbage
- salt beef (although turkey ham sounds pretty good, and is obviously lower in fat!)

I am from Newfoundland so I grew up on this. I can't buy salt beef here in BC though so I haven't had it in years. I'll have to try and find some of this turkey ham!

BTW I seem to be able to tolerate cabbage quite well.

Yes. My mom always used a big bone-in ham for boiled dinner but the usual is corned beef. I subbed the cabbage for kale.
