Hi Here is a pumpkin cake recipe I found and can't wait to try it the only prolbem is how much oil can I use and how much applesauce& do you think the choclate chips will be ok?Thanks! Happy fall all!! emmasmom ibs-c gas lactose intolerant
Pumpkin Cake 3cups flour 2c sugar 1/2tsp. salt 1/2 tsp cinnamon *(see note below) 2tsp.baking powder 2tsp baking soda 2 cups canned pumpkin 1 cup oil? 1 cup chcolate chips 3/4 cup chopped nuts (opt) Mix all dry ingredients togther. Add oil and pumpkin mix well Add chcolate chops and nuts. Pour into a flour 8 1/2x4 1/2inch loaf pans or one large bundt pan.Bake at 350 for 1 hr and 15 minutes. Sorinke with powder sugar if desired. ***** I something sub the cimmon for other things like cinnamon and sugar mix.

You may have to experiment with the applesauce. Try switching out all of the oil and see how it works. If not do 1/2 and 1/2. If you use chocolate chips, they need to be dairy free. Also, check the fat content. Sounds yummy, I may just have to try it!

sounds great, I am definately going to give this recipe a try...you can use dairy free chocolate chips or even carob chips. As far as oil, i usually half it and replace the other half with water. I dont do well with the applesauce.

You can also replace some or all of the oil with more canned pumpkin.
