shortening???

So I found a recipe for apple cornbread that I wanted to try. However it calles for 1/4 cup of melted shortening. Now my questions are...

1) is that ok because it is only 1/4 cup?
2) if not, could I just sub 1/4 cup of oil?

As long as the shortening is IBS-safe (like soy shortening, soy margarine, or All-Vegetable Crisco), it doesn't matter whether you use melted shortening or oil as far as your IBS is concerned. All fats are tricky for IBS and all fats have the same number of calories.

The only question you need to consider is what the total amount of fat in the recipe is. Depending on how much bread you're making, 1/4 cup of fat doesn't sound out of line. That's how much oil is in Heather's Simple Sweet Cornbread which contains 1 cup each of cornmeal and flour and ends up with 29% of calorie from fat.

Oh yes, I would use crisco. It also has 1 cup of both flour and cornmeal. The recipe says it has 33% of fat from calories, but that is using 1 whole egg. Since I would be using eggbeaters wouldn't that bring it down some also?

Yes. You'll lose fat from the egg yolks.
