How would I make this more friendly?
1 2/3 cups all purpose flour 1 cup granulated sugar 1T pumpkin pie spice 1t baking soda 1/4t baking powder 1/4t salt 2 eggs- egg whites 1 cup plain pumpkin 1/2 cup butter (one stick), melted 1 cup chocolate chips.
We ALWAYS had these at Thanksgiving and Christmas time when I was a kid. I remember my parents making these and not being able to wait untill they came out of the oven. I LOVE, LOVE, LOVE them. In the past I have just replaced the butter with margarine and used non-dairy chips. But they still bother me some. I would like to try to keep the taste because they remind me of good times growing up and now I make them with my kids. These are really heavy and dense muffins, just the way I like them. Thanks for any thoughts.

Make sure you're replacing the butter with a non-dairy butter replacement or try canola oil. Then reduce the amount to 1/4 cup and add an extra 1/4 cup of pumpkin. See how those turn out and whether you tolerate them a little better. If they turn out okay but still bother you, try cutting down on the amount of chocolate chips and see if they still taste okay and you tolerate them better.
I think once you get the fat level down a little these should be very tolerable because pumpkin is SF.
HTH. And please post how these come out.

I remade these with the changes you suggested. I used 1/4 cup low-fat, non-dairy margarine. I then added 1/4 cup more pumpkin. I kept the chips the same. The muffins were not as heavy as they used to be. So I'm still going to go and tweak them a little. Maybe add a small amount of flour to make them heavier. Plus I want to try them with canola oil. I'll let everyone know how they come out and I will adjust the recipe to my changes when I figure it. They turned out very good. I even got the gold seal of approval of my husband. Sand, thanks again for your help
