I just discovered Agave Nectar and I love it soooooo much. It is like honey except more liquidy and has a butter taste to it.(of course there is no butter. It is made from the juice of agave plants-a succulent. Neat fact- not all succulents are catci. Wikipedia is great.) You can use agave nectar in place of sugar in recipes.

*Use 1/3 cup of agave syrup for every 1 cup of sugar in the original recipe.

*The quantity of liquids in the original recipe must be reduced due to the moisture included in the syrup.

*Some chefs also reduce the oven temperature by 25°F in recipes requiring baking.

I really enjoy the flavor so much. It is sweet and mild. I have only tried light. There is also dark and blue. I came upon it in the cookbook Vegan Cupcakes Take Over The World by Isa Chandra Moskowitz and Terry Hope Romero, which is wonderful. Well anyway thought all you IBSers would like to know.

Oh, I had to get it in a health food store and it is a bit costly compaired to sugar but so worth it. My local store hadn't heard of it.

I just found this in my local Whole Foods, and decided to buy it to try it. Do you use it mainly in baking? Thanks!

That is what I've used it for. But you can use it for anything that calls for sugar.
