Can you zest a lemon and save the rind/zest for later? Maybe freeze it?

I'm not sure if you can freeze it or not, but I have zested a lemon once & put it in the fridge the day before I needed it. It got kind of mushy & didn't smell or taste as lemony as freshly grated zest.

Well darn. I never have zest when I need it. Now that I have some lemons I was hoping I could save the leftovers. Thanks anyway.

I buy the stuff in jars in the spice aisle and it works just fine! I'm too lazy to zest real lemons.
