Since going Vegan I've had to find ways to subsitute the egg whites in my baking. Applesauce worked great in my banana muffins but not with the blueberry. They ended up burning on the outside and not cooking all the way on the end. They were also very deflated. Any suggestions for something else to use?

So I tried another batch today, adjusting the applesauce and adding a bit more flour. Same issue. Would cooking it without anything work?

I would try egg replacer powder. Applesauce is fine in a recipe that only calls for one or two eggs, but any more than that is when you run into trouble. Egg replacer comes in a box and is kind of expensive but trust me - it lasts forever and is worth buying. It can generally be found in any health food store and is an essential pantry item for any vegan pantry!
