My first real altered recipe -- my mom's chocolate chip cookie recipe is classic, but not safe. My version turned out pretty well and definitely fulfilled the craving! Oh, and you don't taste the pumpkin at all.
Not Quite Mom's Chocolate Chip Cookies
1/4 c canned pumpkin 2 T earth balance vegan margarine 1/4 c sugar 1/2 c brown sugar 1/2 t vanilla Cream the ingredients. Add: 2 egg whites (3 T egg beaters) Blend. Add: 1 c + 2 T flour 1/2t baking soda 1/4t salt Blend in well. Stir in: 6 oz (3/4 c) dairy free chocolate chips.
Spoon rounded teaspoons (eating spoons, not measuring) onto ungreased cookie sheet. Bake at 350, 10-14 minutes.
Let rest on cookie sheet about 5 minutes, but remove to rack before fully cooled (otherwise, they stick).

Do you think I could use applesauce rather than pumpkin? I am in one of those periods where I DETEST pumpkin (i get periods like that for pumpkin, cinnamon and nutmeg, LOL, a couple of months, I love it, the next couple, I absolutely hate it).
