Any Eggplant Parmesean Recipes?

Hello, I'm going home for my Grandma's birthday next month, and have taken on the challenge of cooking for my whole family, which includes my IBS brother, picky-eater sister, and my Grandma who needs to watch fat intake because of her recent stroke and pacemaker, so I thought...Eggplant Parmesean!! Does anyone have any suggestions/recipes that are low-fat, delicious, and IBS-safe? Thanks so much!!! Chrissy

It sounds REALLY yummy, but how do you get the bread crumbs to actually stick to the eggplant? Don't you need to coat the eggplant with egg whites or something?

Well, I have yet to try this....but my first thought would be that the sliced eggplant is already moist (right?)
