I just made a yummy sort of wrap today... I guess it's just a chicken rice wrap... nothing fancy, but it was a nice, toasty lunch.
* 1 large flour tortilla
* 1 pkg Knorr/Lipton Rice Sides, chicken flavor, prepared (I use 1 tsp Spectrum Spread instead of 1 Tbsp margarine or you could use neither)
* Safe oven roasted chicken deli meat, thinly sliced (I usually look for one that just has chicken, water, salt, & evaporated cane juice, but today I used Boar's Head Aroastica chicken... yum!)
In a non-stick skillet over med heat, heat a few slices of chicken (4-5 thin slices) until warm. Remove chicken from skillet. Heat tortilla in skillet until warm, turning once. Spoon some prepared rice onto tortilla. Top with warm chicken. Fold tortilla (careful, it's hot!) and eat!
You could really do this in the microwave, too, but it won't get the tortilla toasty the way this does. It was a super easy and quick lunch. You could experiment with some safe seasonings if you want, but the chicken rice flavor is enough for me... not exciting, just a yummy comfort food on a cold day.

Just a quick note... we were just talking about this rice mix on the EFI board and I was told that the hydrolized soy protein in this rice mix is a relative of MSG, so some people who are super sensitive to MSG may not be able to eat it. I am very sensitive to MSG, but I do fine with this particular brand and flavor of rice mix. Just a head's up.
