Can someone give me a recipe for applesauce? I don't have a blender or a food processor though.

Here's Heather's recipe from Eating for IBS:
2 apples, peeled, cored & chopped
Put apples in a small saucepan & add just enough water to cover the bottom. Cover & cook over med-low heat, stirring occasionally, until apples disintegrate, about 20-30 min.
Serves 2, easily doubled

Kim - when I make applesauce, I don't use a recipe. I peel apples, sprinkle with some sugar depending on how sweet the apples already are, put in some cinnamon and nutmeg and some water or apple juice and bring to boil. Turn down low, cover and cook for about an hour or until apples are really mushy. Use potato masher or hand mixer to moosh apples and, viola, applesauce!
If I come across a recipe, I'll post it if no one else has.

OK, so I've got the applesauce. But now, I have a lot of "juice" leftover. Is there anything I can do with it?

I do just about the same thing, but I don't add sugar. I'm on Weight Watchers and still watch my points. I have one of those counter devices that cores, peels, and even chops apples...a wonderful thing for someone all thumbs with knives. Anyway, I hardly have to mash much at all. I've been thinking of canning a bunch of applesauce, too.
