The Best Veggie Curry EVER!

Another "La Dolce Vegan!" recipe; the cinnamon adds the perfect touch to this curry. It's VERY spicy, so you may want to tone down the cayenne the first time you make it!
Serves 2-4
white rice for serving 1 small onion, chopped 3 T olive oil 1 small sweet potato, peeled and cubed 1 large carrot, chopped 2-3 garlic cloves, minced 1-2 cups vegetable stock (I use closer to 2) 1/2 small red bell pepper, chopped 1/2 small zucchini, chopped 1 14 oz can garbanzo beans, rinsed and drained 1 t ground turmeric 1 T curry powder 1 t ground cinnamon 3/4 t cayenne 1/2 t salt 1/4 cup raisins
While rice is cooking, in a large saucepan on medium heat, saute the onions in oil until translucent. Add the sweet potatoes, carrots, and garlic, and saute for 2 minutes; stir occaisonally to avoid sticking. Add the stock, red peppers, zucchini, garbanzo beans, turmeric, curry, cinnamon, cayenne, and salt. Stir well. Reduce heat and cover with lid. Cook for 15-20 minutes, or until vegetables are tender. Stir in the raisins, remove from heat, and let sit for 5 minutes before serving.
