Baked Macaroni and Soy Cheese

After adapting several mac and cheese recipes to fit my tastes and dietary needs, I finally combined them and came up with a baked mac and cheese recipe I absolutely love! Even my cheese-eating parents were impressed with it. So without further ado...
Kree's Baked Macaroni and Soy Cheese (Makes 4-6 servings)
2 cups uncooked elbow macaroni 2 cups cheddar soy cheese (I use Galaxy Foods Veggie Shreds) 1/4 cup Egg Beaters or 2 egg whites 1 1/2 cups soy milk salt and pepper to taste 1 Tbsp (soy) margarine (you can also omit this, but I like to add it!) breadcrumbs soy parmesan cheese
1. Preheat oven to 350 degrees. 2. Cook macaroni according to package directions until al dente. 3. Drain macaroni and pour into baking dish. 4. Add soy cheese, Egg Beaters, soy milk, salt and pepper; mix thoroughly. 5. Dot with margarine and sprinkle with breadcrumbs and/or soy parmesan. 6. Bake for 30-40 minutes or until it is well melted and the top is slightly browned.

Kree! Thanks so much for this recipe! I was dying to make it, but afraid to be disappointed at the same time. I actually liked it! Even my fiance (who's been doing atkins again - we won't even go there ) had some and went back for seconds. He's a BIGTIME mac & cheese freak, so that must mean something.
The only problem I had was it needed more of a sharp bite to it. I love(d) extra sharp cheddar. I sprinkled some extra soy parm on my serving, and that gave it more of it. For the heck of it, I added a few drops of hot sauce too (and this is not typical of me BTW), and it was REALLY good. I actually craved it today, and couldn't wait to come home for lunch for leftovers!

Yay! I'm so glad you and your fiance both liked it! As soon as my cheese-loving parents told me they wanted me to make it again soon I knew it had to be good, lol. I know what you mean about the sharp cheddar, though... as much as I like soy cheese it just isn't the same! Good thinking with the hot sauce! I added garlic powder to my bowl once and that added a little zip too. Hmm... now that you mention it I need to make this again very soon. There's just something about carbs!! I don't know how your fiance can live on Atkins!

Well, when he is following Atkins, at least my breads and muffins (etc.) are protected! LOL Just kidding!
Thankfully, he is not too hard-core Atkins. He still eats veggies and carbs (just not in first 2 weeks or so for the carbs), but he'll have them early in the day. (except for Kree's BM&C night! LOL) So, I feel better he's not totally killing himself.

I like the way you think, Mags! There's nothing wrong with coveting our precious IBS safe foods. Lol.
I'm glad to hear that your fiance isn't going all out on the Atkins thing. I guess people lose a lot of weight on it, but it just seems so unhealthy! We all need our veggies! Isn't it also annoying to know that all these people who are able to eat raw broccoli, fruits, etc. aren't, by choice??? It's just not fair!

Yep, Egg Beaters are egg whites! The original recipe called for one egg so I just use enough Egg Beaters to make 2 egg whites!

Kree, this is very, VERY good -- definitely a keeper. I just made it for dinner tonite; hubby had 2 helpings, I had one. I added frozen peas for some insoluble fiber, and I think next time I make it -- and there WILL be a next time! -- I'm gonna add more soy cheddar. (I like cheese.)

Kree or anyone... have you tried using Soya Kass cheese for this recipe? Do you think it would work ok? I wanted to ask before I tried it since it is so much more expensive then the galaxy stuff.

Shell, I don't know Soya Kass. I made mine with Vegan Rella cheddar -- it was yummy -- but next time I make it I'm gonna add more of the cheese. (Also I like the peas in it too.)
Maybe someone else can help you with that Soya Kass. Sorry I can't. But post again after you make it and let us know what you ultimately used and how it came out, okay?

I've never tried Soya Kaas either, but I'm assuming it would work just as well! I hope so, since I don't want you to waste your money.

oh goodie... then I'm one step closer to havin all the fixings!! hehehe
I just had a slice of the Soya Kaas jalapeno cheese cut up and melted on a few Stacy's baked pita chips... microwave for 20 secs is all it took......YYUUMMMMMMMMM!!! I can't wait to try either this kind or the mild cheddar with your recipe

Jalapeno cheese... yech! Sorry Shell, but that one just doesn't appeal to me. I don't do spicy foods well... not even my tummy, just my mouth! But I'm glad you found something you like that much.
Now that I think about it, I did try Soya Kaas's fat free cheddar when I was first getting into soy cheese, and I didn't think it was that good. But looking back, I don't know how the heck any fat free cheese could be good, so I bet the regular kind is a lot better. I'll have to give it a try sometime!

Hey Shell - when you get the store bought, just double check the ingredients. I had to get the store brand, because the "brand" names at my local store contained dairy.

Shell, why not just make your own? It's a lot cheaper. Just take out some leftover bread the day before and let it get good and stale. The next day, throw it in your food processor and pulse it a little -- bingo you've got yourself some great bread crumbs.
Whole wheat doesn't bother me -- I'm so glad -- and it makes great bread crumbs.

Finally made this again tonight with RICE cheese. OMG what a difference! I honestly can not even stand the smell of soy cheese anymore. I don't know what happened, but oh well. Now I LOVE rice cheese though, so I decided to try it that way with the rice cheddar shreds. YUMMY!!!! I didn't even need to add the hot sauce this time! LOL

I use their cheddar and mozzarella all the time. I can actually eat the blocked kind sliced with crackers and I'm not grossed out! I order pizza all the time with no cheese and throw the mozzarella shreds. I love this stuff.

I have to go to Whole Foods to get mine, and when I do, I STOCK UP!!!! I just went yesterday and bought $40-some worth of rice cheese! LOL The cashier said, "That's a lot of cheese!" LOL I've been meaning to ask at the customer service of my grocery store if they would stock it for me, since they have Veggie Shreds which is by the same company, but haven't gotten around to it.
BTW, tonight we made grilled cheese on sourdough bread with the rice slices...I used cheddar flavor and hubby used mozzarella. (Yes, see how much I love him...I let him use my precious rice cheese! LOL) It was so good!! Even hubby loved it!

Yay! I had decided tonight would be my last attempt at mac & cheese before finally giving up. It's not as good as the real dairy thing, but it's pretty darn good.
I used Soy Station Cheddar and Better than Milk powdered soy milk. I think I may add more cheese next time.
Of course, the ultimate test will be how it tastes cold (I used to love cold leftover Kraft mac & cheese), but it's tasting pretty good hot, too.
I'm thinking the soy milk/cheese combination will also with the one of the other mac & cheese versions around the board.
YAY. I so missed mac & cheese.

I did not have a problem with it...and I'm guessing from the length of this thread, not many others did either.
I find soy cheese melts better than rice cheese, especially the Lisanetti brand. It melts AND tastes like dairy cheese.

I just made this Sunday night! I finally found bricks of Galaxy Foods Vegan cheddar at Whole Foods and it worked great. I also added frozen green peas and a can of tuna for some IF and protein. Although I doubt you'll want to add the tuna.

It probably depends on what cheese substitute you use. I can't find nutritional info on the Veggie Shreds Kree says she uses, but the Galaxy Foods website does say they are low fat.
To get fat content you'd need to figure out what cheese you want to use then do the math to see how it works out.

I made this last night and it was soooooo good! Totally satsfied my stressed-out-from-finals-need-comfort-food craving! Actually I think I liked it better than any regular mac and cheese recipes I've made. I think it would be easier to mix the cheese, milk, etc. together first, because the cheese kind of melted in chunks as I tried to stir it into the macaroni. It was still great though! I'd never had soy cheese before and I was afraid - when I opened the package it even smelled and felt a little weird, but I went with it, and it was fantastic!! Couldn't tell a difference (FYI, I used cheddar Soy Sation)

I want to try this recipe because I'm so hungry for mac and cheese. However, the soy cheddar veggie shreds make me horribly sick. Would this work with the mozzarella veggie shreds? Has anyone tried it that way?
