Rice 'n Peach Salad

This is a really good side dish salad... very colorful.
1 1/2 cups cooked rice
1 can (11 oz) whole kernel corn, drained
1 cup fresh or thawed frozen peas
1 peach, coarsely chopped
1/2 cup fat-free Catalina dressing
1/4 cup chopped red onion
1/4 cup chopped cilantro or fresh parsley
Mix all ingredients in large bowl. Refrigerate until ready to serve. Makes 10 servings.
The original recipe also called for 1 cup of chopped toasted almonds. I'm pretty bad at doing math on the fly, but if you can handle nuts, I think you can add 1/4-1/3 cup of them and still be ok with the fat grams. I just make it without the nuts, and it's still tasty.

Ooops.
I never thought of pairing peaches with a "Catalina"-style dressing, and peas, etc. I used to love that dressing as a kid! I actually often substitute peaches for tomatoes in the summer. It sounds like a tangy salad idea for hot daze.
I actually eat a lot of fruits in the summer as one would eat vegetables. I just think that lima beans would taste better than peas with the peaches, corn, and Catalina. Crazy me would add a zucchini or two, as well.

Personally, I hate lima beans - one of the few veggie-type-things I won't eat - so it would never occur to me to try it in place of peas. But if you like limas, I bet it would be tasty. Seems like it would make it a little heartier, too.
And I don't think adding zucchini is crazy. Mmm, zucchini. I can't wait till our garden gets growing!

I think I will--I love recipes like this that are so adaptable! Even blackbeans or snopeas would be delicious.
Mmmm...I know what you mean about zucchini straight out of your own backyard. What I love even better is zucchini flowers! My asparagus is halfway there.

(Well, I AM, but not for THAT!)
I love salad recipes in general. I'm of the opinion that you can put just about anything in a salad. I'm pretty experimental in the kitchen, so that suits me just fine.
