Parmigiana Chicken Packets
4 sheets Heavy Duty Aluminum Foil 4 skinless, boneless chicken breast halves, abt. 1 lb. 1 c spagetti sauce, any flavor.....(I like Prego brand) 2 medium zucchini, sliced 1 c mozzarella cheese, shredded (soy or rice) 1/4 c grated parmesan cheese (soy or rice if nec.)
Preheat Oven to 450. Spray foil w/Pam. Center one chicken breast half on each sheet of aluminum foil. Spoon 1/4 of the spagetti sauce over chicken. Top w/zucchini. Sprinkle with cheeses. Bring up sides of foil and double fold. Double fold ends to form a packet, leaving room for heat circulation in packet. Make 4 packets. Bake 20-24 mins. on cookie sheet in oven. Actually I think it may take a bit longer...
Serves 4. Prep. time 10 mins. UHUH.....not for me.....guess I'm slow as it takes me a bit longer!
Note: You will have some sauce liquid which can be used over pasta. For you lucky SAUCE eaters, you can just heat some sauce for a heartier spagetti sauce on pasta.
These are easy and nice for company too!

Know I got this recipe out of a store ad at one of these 2 stores. They often have good and easy recipes in their fliers, FYI.........so it's worth taking a look at the Sunday ad flyer. Tops also at least used to have recipe cards in the store. Think they are near the bulk foods, but just ask!!!!!!
