Egg Salad Sandwich

I made egg salad for lunch today and it is delicious - although a little stinky (I feel bad for the poor girl in the cubicle next to me). Anyhow - this is what I did - I didn't measure anything, so I am estimating on most:
2 slices bread Hard boiled eggs (2-3) - yolks discarded, whites chopped 1 green onion, chopped Sliced black olives (maybe 5 olives...) Dill weed (1 tsp) Black Pepper (1 tsp) Mayo (I used Fat Free - about 1 TBS)
I threw it all in a bowl, mixed it all together and put it in the fridge last night. This morning I made the sandwich. It's really very good - a nice change from leftovers!!

Sounds yummy. To get rid of the stinky smell I add a bit of vinegar to the water when boiling the eggs. When hard boiled the shells feel a little rubbery but does not affect the taste of the egg at all!! Peel, mix and enjoy!! Sue
